I would say too that using schmaltz, or oil for that matter instead of
margarine is a great idea.  Margarine is a nutritional nightmare and all
of us dairy free folks need to be careful about the amount of margarine
we use.  Another great alternative is Spectrum Spread which has no
hydrogenated oil or trans fatty acids. We use no margarine now since
I've found it. I get it at Fresh Fields here near Wash., D.C. but I am
sure many places carry Spectrum products.
