I used Rice Dream in potato soup and oyster stew and it works fine.
However, it is more watery and less creamy and rich than using milk. I
usually make two batches, one with milk for my husband and one with rice
dream for me, and it is easy to tell the difference by appearance.
I was going to use it in New England style clam chowder, but I found a
recipe for clam chowder that does not use milk and we like it better without.
