Listmates,

I bought some tuna and noticed the additives, so I called one of the
companies, and they pointed out to me that it was the albacore tunas that
tend to have additives because they have such little flavor.  The other
proteins are added as flavor enhancers, and they said that this would
probably be added by any of the tuna companies to albacore tuna. They
suggested sticking with the cheaper darker tuna.  Check your labels, and I
think you'll find this rule of thumb to be helpful.
