I understand that cracked wheat bulgur is heated, hence would not
qualify as raw food, whereas steel cut oats are only mechanically
processed. Though denatured, the latter appear to be still considered
raw food. Sorry I don't have more details on the exact process of
obtaining bulgur. It was a staple before I found out. I was crushed :-(
