Ann Louise Gittleman (a so called nutrition expert who pushes The Zone
Diet) claims that cabbage, broccoli, cauliflower, kale, watercress,
turnips, soybeans, and rutabaga should be eaten in moderation and SHOULD
NEVER BE EATEN RAW because they contain goitrogen, a chemical that blocks
iodine absorption by the thyroid gland. Goitrogen can cause thyroid
problems. She claims that cooking these foods inactivates goitrogen.
I don't think cooking does this, but I am not sure. Does anyone know?
