If you put a little sugar in the water then the oats will not spoil.
What happens then is that they get fermented. Bacteria in it propagate and
break down proteins to amino acids which makes the oats easier to digest.
Fermented oats taste a little like yeast and smells like sour-milk.
As all fermented vegetables it contains small amounts of B12!
The water (called rejuvelac) is drinkable too.
