My favorite trick: "Tortilla Chip Chicken"
dip chicken breast or strips into melted butter and then coat with crushed
tortilla chips- put in a lightly sprayed pan and bake until cooked and
crunchy on outside.
Also, Ms Robens makes a great batter coating mix for cutlets and fish, etc...
1-800-891-0083. Also if you mix the batter mix with olive oil and sautee it,
it makes a scampi like batter for chicken pieces or shrimp (kind of like the
crumbs you used to find on baked clams).
