Thanks for the web site information. Fascinating to think that for a couple
hundred years, middle class French and Italians have known and applied this
knowledge.
Some comments on the gaining weight postings.
It is important to make a ceremony of meals because that way they become a lo
tmore satisfying. Those religious people who say a prayer of thanks before
they eat have an advantage here because they in principle treat their food with
the respect it deserves rather than promiscupusly shoving snack food into their
mouths while watching TV or driving a car.
The second point is rice. White rice is all carbohydrates with little vitamin
or mineral content. Brown rice is of course different with a wonderful nuty
taste. But if you have trouble adapting to this due to years of white rice
eating, try cooking 2/3 white rice with 1/3 brown rice and then eventually
reverse the ratios. If you use fragrant rices like Basmati or jasmine, the 1/3
white rice part balances out the brown rice taste.
The third point is about acidophilous. The best way to get these is through a
good quality yoghurt where these and other strains have been added. There is
also a wonderful Japanese product called Yakult which is a tiny bottle of
sweetened milk with a different type of beneficial bacteria.
