Dear List members;

I have been diagnosed with celiac since birth. As a child I had
maintained an excellent gluten free diet. However, once I left my
home to come to law school, my mother stopped packing me lunches, and
I had to fend for myself. Unfortunately, this has transpired into
alot of fastfoods and alot of wheat, flour...

The time has now come to grow up and take care of my own body. I
understand the basics of a good diet, but I do have a couple of
questions:

    1) I have downloaded a diet from the celiac list, but can
    anyone suggest another "weekly" or "daily" diet that can give a
    list of nutritional requitements necessary.

    2) I have eaten alot of potatoes over the last few years, is that
    a no-no?

    3) How often is it necessary to take biopsies?

Thank you in advance for any answers that you can provide.
