Yep, the four hour response has been my rule of thumb too.  The original
posting talked about taking pepto-bismol, which I think works great for
traveler's diarrhea.  However, I have found that taking the Maalox that has
simethicone in it just after eating something that you (later) find out has
gluten in it REALLY helps reduce the later symptoms (bloating, cramping,
etc. etc.)
