As a celiac you probably know more about your condition than a nutritionist.

Quinoa, amaranth, teff, buckwheat are not related to wheat.
To summarise more detailed discussion previously posted and available in the
 archives.
These should all be safe for a celiac.
Buckwheat can cause indigestion in quantity but this is not related to the
 celiac condition. Quinoa should be washed in boiling water to remove saponins.
