Because they =taste= =good= that's why! For simplicity's sake our whole
family is going on a gluten-free diet (two mischevious toddlers in the
house makes having gluten-laden goodies around too dangerous). If the
problem with any of the above-mentioned grains is that it is frequently
contaminated with other toxic grains, and not with the grain itself, then I
for one would like to investigate ways I can use those that would be safe
(if they were not contaminated) like growing and milling my own, for
example.

Especially oats, which would open up many possibilities in cooking.
