I believe the main risk is a long term one:  Not following a gluten-free
diet increases your risk of lymphoma or cancer in the small intestine,
and possibly elsewhere in the digestive tract.  There is some
disagreement as to whether or not a small amount of gluten can be
tolerated.  My person belief (I'm not a doctor) is that you should try
to make your diet as completely free of gluten as is possible, to
minimize that long-term risk.
