Karen,
Because I am a celiac also, I didn't introduce gluten into my daughter's
diet until she was a year old, either (she is now 19 months old).  We
never used teething biscuits at all.  Maybe it was just Cynthia's
personality, but she never wanted to chew on those rubbery teether
things, either.  What she DID like to chew on was raw carrots.  Before
they have teeth to bite off pieces of the carrot, I believe raw carrots
are considered safe (two little tooth nubs in front don't seem to be
enough to get chunks off the carrot).

Since washing a carrot from the fridge is a lot easier than baking
something from scratch, you might at least try the carrot idea and see if
Erin is interested.
