There is a book called _Good Food Gluten-Free_ (I don't remember the
author and loaned the book out, so I don't have it right now).  The
author goes over some history of the condition.  There was some
information about celiacs who worked in flour mills being exposed to
gluten through inhalation or even topical exposure who reacted.
