Hi Catherine,

I noticed a lot of people responding with Pancake Mix suggestions.
Mine suggestion is from the "Gluten Free Anytime" Cookbook which I've
adapted to make the pancakes fluffy and lighter.

1/4 cup white rice flour                1/4 cup brown rice flour
1/2 cup potato starch                   1 tbsp. sugar
1/2 tsp. salt                           1 1/2 tsp. baking powder
1 tsp. baking soda

2 eggs                                  3 tbsp. oil or melted margarine
1/2 cup BUTTERMILK                      1 tsp. vanilla

Mix together the dry ingredients.  Beat eggs. Add milk, oil and vanilla
to eggs.  Add wet to dry ingredients and beat until smooth.  Fry on
lightly oiled skillet.

I always double or triple this recipe for a family of 5 and freeze the
leftover pancakes for quick snacks for the little celiac in the family.
