I know I'm late on this, but I wanted to suggest a possible link.
 
I have read that celiac is sometimes triggered by an infection. I believe
my celiac was triggered by a bout with Salmonella which was treated
with Cipro. Even though the Salmonella was cleared up, the intestinal
problems continued until I started the GF diet.
 
I am wondering if it's the intestinal infection (dysentery,
parasite, flu) and not the medication that is triggering celiac.
