A question of clarification regarding the carbohydrase enzyme findings:
Does the literature suggest that a person with celiac sprue who ingests
no gluten nonetheless suffers a long-term enzyme problem with
corresponding deficiencies in the digestion of (non-gluten containing) foods?
Or is it that people with sprue who are getting a little gluten have
these problems?
To some degree this distinction is probably one of degree, since even the
most strict adherent to a gluten-free diet is likely to be getting trace
amounts occasionally from various sources. Nonetheless, it seems
important to know whether sprue leaves one with a damaged gut even in the
theoretical absence of gluten.
