I was sent this note today for an interesting reference document from Spain.
It is 505 pages in length. Because of the length, I have not completely

The Celiac Disease Information Center is proud to announce the book Celiac
Disease and Non-Celiac Gluten Sensitivity, a 25-chapter anthology with the
latest research and guidelines on these conditions by world-renowned
scientists from Europe and Latin America.
The original Spanish language version of this work has had, to this date,
tens of thousands of downloads and it has become a reference book in the
Spanish-speaking world offering the current state of knowledge on celiac
