Did you know that Buckwheat Pete's Easy Gluten Free Baking Recipes also work well with quinoa, rice and amaranth flours?  Substitutions are easy, too.  It's just a 1 to 1 substitution.  (Eg. If the recipe calls for 1 cup of buckwheat flour you can substitute it with 1 cup of quinoa, rice or amaranth flours.)
