Ok, Mike.
This is valuable to know, not just for the N3FJP application, but probably
for others as well.
Just never had the occasion to use the button labeling function, I guess.
Will definitely save these instructions for future reference.

Put the Jaws cursor on the graphic you want to label.
While still in the Jaws cursor mode, press Jaws Key plus g.
Then, follow the prompts, the first of which is to type the label that you
want to have spoken for that graphic.
