There are two differences with the 6-Plus.
1. It has a larger battery and display.
2. It has a optical image stabilization feature that works with the gyroscope in the phone that is not available in the 5S and 6.
The processor is the same as in the 6 and I doubt that any additional memory would make it perform faster unless you had a ton of apps opened simultaneously.

All the larger memory in the phone does is to give you more space to store
your music, pictures, books etc.
