These issues are now resolved! Alternate pointer sets are available
in the "Mouse" applet of the Control Panel, and I've selected oversize
ones that are clear and easy to see.
And once I viewed the Administrative Tools "as icons", I was able to
drag a Services shortcut to the desktop, so that I can easily get to it
to turn off the stuff Apple insists on turning on every time I update
QuickTime.
