Susan - Here's one more sample that says life-threatening allergies and
daycare/preschool can mix.  My daughter's daycare has grown up with her
allergies, and are extremely careful about all of her food, and her
classmates' food.  She is 2.5, and also knows that cow's milk makes
her sick, (also eggs and peanuts), and that her milk comes from rice.
One boy in her class drinks goat's milk, so they talk about the different
kinds during the meals.

I have turned down openings at several daycare centers, because I didn't
feel comfortable about how they handled food, so you do have to look
carefully, and be vigilant.

and without cheese for herself.  Last week, a boy in her class was
making pretend sandwhiches in the sandbox with "bread and cheese", and she
asked him to make one for her with no cheese!)
