I don't seem to be able sodium nitrite either. I have celiac disease, and
also seem to have a milk intolerance. Perhaps it is another allergy that has
developed from the intestinal permeability. Conversely, it may be due to a
deficiency in PST, an intestinal enzyme that seems to be needed to digest it.
