Vanilla Butter Cake
Preheat oven to 360
11/2 cup granulated sugar
1stick butter – room temp
4large eggs, room temp
2cups gf flour
1/2tsp salt
1Tbsp baking power
1/2tsp xanthan gum
3/4cup milk (low fat can be used)
2tsp vanilla
2 cups favorite frosting
Grease and flour pan – I used 8 x 10 or make cupcakes.
Bead butter and sugar until light and fluffy; add eggsone at a time – beat well. Mix dryingredients in separate bowl. Add milkand vanilla – mix well. Add dryingredients and mix well. Pour intoprepared pan and bake until toothpick comes out clean.
Frost with favorite frosting.
