Hi All,
The binder in commercial gyros meat contains wheat gluten.
One person suggested that the closest relative to gyros is Greek souvlaki and suggested finding a souvlaki recipe and substituting gluten-free flour and buying ground meat.
Other searches (google, grocers) turned up nothing. Someone suggested that since I live in a suburb of Chicago (which has a wonderful Greektown), I contact some of the restaurants in Greektown--a good idea!
