I happened to buy a couple of boxes of Glutino's Gluten-free Corn Bread Stuffing, just because I never tried it before.  Consistent with my other Glutino experiences, it came out rather good, and no-one will know it's gluten-free.

I followed the directions, but used water instead of broth.  I added onion powder, dill and pepper and fresh chopped garlic and diced carrot, which the box didn't call for.  Probably didn't need to.  I'm glad I didn't add salt or thyme or turkey spices.  It was already quite spicy, but I didn't know that, and I'm not a fan of thyme or turkey spices.  I also usually cook without salt, so I noticed the salt.  

I don't agree with the box that says half the box serves 8, unless all of your guests are small eaters and you have a lot of other stuff to serve.  I think the full box is good for 8-10, if they eat like my sons did when they used to come home for the holidays.
