Up North Potato Salad
3 – 4# Small red potatoes sliced into ¼” slices
1# fresh green Beans
2 – 3 slices bacon, fried
1/3 cup olive oil
¼ cup cup chicken broth
¼ cup tarragon vinegar
½ cup chopped green onions
¼ cup chopped fresh parlsey
1 garlic clove, crushed
1 tsp. salt
1 tsp dry mustard
Pepper
Cook potatoes until barely tender and drain. While potatoes are cooking,
fry bacon until crisp and drain on paper towerls. Crumble when cool.
Wash and cut green beans into 1” pieces – steam unti tender and drain.
Combine remaining ingredients and pour over warm potatoes and green beans
together in serving bowl. Refrigerate until ready to serve.
