I thought some summertime treats might be of interest to some of you. DH
and I have been remenissing about some of our romps through Baja as we're
planning a trip to Cabo later this summer. Of course my focus is on the
food since we are leaving the kids w/ my parents :-) As luck would have
it, my Sunset magazine came and there are recipes for Paletas. These are
popsicles that are sold in the groceries or by street vendors. The
creamy ones have milk them, but there are fruit ones. The fruit recipes
are out for us bc of the lemon juice. So, the pina colada ones caught my
eye and whipped up a batch - dairy free! They used dairy milk plus
coconut extract, but I used the juice from the canned pineapple plus
cocunut milk. It was a little bit too much for my set of Tupperware
molds, but probably would have been just right for my other ones. I put
the extra into a small gelatin mold. You could use paper cups if you
don't have pop molds. To see the other ones, you can go to

soon I'd guess. Anyway, here is my version:
Pina Colada Paletas
1 8oz can pineapple chunks, in it's own juice
1/2 c coconut milk
1/3 c sugar
1 tsp vanilla
Combine all ingredients in a blender jar. Blend at high speed until
smooth and creamy. Divide evenly among 6 fruit bar molds and follow
manufacturer's directions for setting sticks. Freeze until solid, at
least 3 hours. Unmold according to manufacturer's directions.
