Do you have a link to a source with more info on that?  I did a search on  
Google to read about it and didn't see anything about increased celiac  
rates among bakery and flour mill workers.  (I did see a lot about  
allergies and asthma, as you'd expect from continually inhaling any kind  
of fine particulates, but nothing about celiac disease.)
