5. Authentic Foods is now offering by mail a GF product line made from bean
flour. This flour is different from the Canadian bean flour. The
products are: bean flour, Falafel Mix, Italian Veggie Mix, Pancake &
Muffin mix, and Chocolate Cake Mix. They also offer vanilla powder,

6. Natural Feast Corp. is expanding their line of Deep Dish Pies made with
natural ingredients and fresh fruits. Production is in a gluten-free
plant. The frozen pies are available in various sizes (8 oz to 3 1/2
lb.). They are available in apple, blueberry, lemon cream, cherry,
peach, or pumpkin. A variety pack of pies is also available. They are
shipped 2nd day air for delivery Wednesday through Friday. Shipment is

is offering GF cookies. They are available in various flavors: Biscotti
(Chocolate Hazelnut, Chocolate Chip Hazelnut, Almond, Chocolate Chip
Almond), Anise Butter Cookies, Cinnamon Marble Cookie, Date & Nut Bar,
Walnut Chocolate Butter Cookies, Hazelnut Chocolate Butter Cookie, and
Pecan Sand Dollars. Each item is available in one pound, half pound or
singles.
8. Canola Oil based upon its genetic family should be appropriate for the GF
diet. Many report celiac type of symptoms after eating products with
canola oil as an ingredient. Celiacs are known to have additional
intolerances. As a Canadian celiac study showed, problems can be
encountered with everything from rice to chicken. There are many
assumptions why canola oil may present problems. Those celiacs with
problems should avoid canola oil by using another oil.
9. Fast Foods Items are a risk for celiacs. Your life style will determine
which items are included in your diet and the risks acceptable from
ingredients or cross contamination. A new area of concern is the
practice of individual stores buying from different purveyors.
Restaurants can be locally or corporate owned. When locally owned, there
is often a greater possibility for the restaurant to use similar items
from local sources, which may not always be the same ingredients as the
corporate item. These differences include the potential for preparing
items differently and the introduction of cross contamination. When
traveling, ask questions about the GF menu items you use at local
restaurants.
10. General Food Corporation no longer reports the gluten-free status of
products. Information is supplied on pure ingredients on the label.
Details on secondary items (flavors, maltodextrin, spices, etc.) that
could contain gluten are not reported. Their logic is that these items
are minor ingredients and any toxic proteins would be negligible.
Celiacs should complain about this disservice to their health by calling
Customer Service at (800) 431-1003.
11. GF Product Status is an area of confusion among the FDA, celiacs, and
manufacturers.
When we are told that the status is a result of product tests, celiacs
should ask questions about the test standards.
Which grains are considered toxic? For which grains was the
product tested?
What is the maximum allowable toxic protein content in the
finished product? ero is the best course of action.
Several companies no longer identify items that are GF. This is
wonderful when comprehensive ingredient information is on the label.
When nebulous terms, natural flavors, and actual ingredients are not
released, celiacs should avoid the product. Understanding production
techniques and sources of gluten remains the celiac's responsibility.
12. Presto Bread Slicing System. The system holds a loaf of bread and guides

13. Pasta Machines are used by celiacs around the country. Several groups
are reporting good results with small machines and Bette Hagman's recipe.
The manual machines and a set of dies are inexpensive, less than $100.00.
Most pasta shapes are available. Bette Hagman's demonstration, in May,
with a manual pasta machine showed how easy it is to obtain good,
homemade pasta.
14. Pasta: A newly diagnosed celiac may not know that GF pasta and Chinese
noodles are available. To determine your favorite pasta, try several
different types by ordering one of each pasta. The primary ingredients
are various combinations of rice (white and brown), corn, tapioca, or

15. Mallard Pond Farms have added several new products to their popcorn
flour. They are: a lactose-soy free brownie mix, pepper sauce, Green
Chile seasoning, Hot Green Chile seasoning, and tarragon. A 15% discount
is available to celiacs.
They are planning to publish a GF cookbook toward the end of the year and
would appreciate recipes using their popcorn flour. Groups interested in
holding local cooking contests can request 15 pounds of flour. They will
