A reminder that if you swap out or simply add in splenda to your cookies they won't spread paper thin. I swap about 1 cup for white sugar in a double batch of chocolate chip cookies. This works great for cookie press cookies by swapping at least half the sugar for splenda. too much spread? Then add more splenda.
I know some people dont like sweeteners, but this is a great trick for gluten free cookies.
