Sorry. Didn't know it would be so difficult to find the buckwheat pasta. Use rice noodles instead. The recipe is Asian in flavor, so I doubt it would be a problem. Lin

Here's what another listmate suggested.....
The Eden Brand is 100%..c.alled Buckwheat Soba...and is very expensive..it is made on equiment that also handles wheat
The Orgran Brand, made in Australia, used to be 100% buckwheat, is now  90% buckwheat and 10 % rice... you would have to call about equipment  they have a website www.orgram.com..much cheaper than the Eden
