I was reading an article by Brunella Gualerzi in an August issue of
Guideposts. She donated a kidney to her nephew after losing more than 70
pounds. She cooks at il Bistro Italiano in Grand Junction, CO, to cater to
special diets, without sacrificing flavor. Some "meals are gluten free, or
made with no added fat or salt, but they are still delicious." You may want
to try this restaurant out if you live near there..
