Not sure what "steak-ons" you are referring to, but you can buy crimp on
ring terminals at Homo Depot or Auto Zone or places like that. You can
attach several wires to one terminal. Stating the obvious here, but be
sure to strip the ends of the wire before crimping them in the terminal.
I think the size that is yellow color will fit the screw nicely and allow
you to insert 2, 3, or 4 wires, depending on what gauge wire you are using.

I don't think it's the end of the world if you attach all radials to one
side of the antenna and bring some of them back to go in the other
direction. But I think you would be better off if you put half on one side
and half on the other. Remove the screw and put half of the radials on the
screw and reinsert it into the base of the antenna. On the end of the screw
that is now sticking out of the other side of the antenna, attach the rest
of the radials, your coax braid, and the bottom end of the little matching
coil, then tighten up everything with washers and nut. If you don't go
the crimp terminal route, just wrap the wires around the screw and be sure
to use a washer to squeeze the wires between the nut and antenna, or you
will have a hard time getting things to stay in place.
