The next meetings of Alamo Celiac, GIG® are April 21st and 22nd. Both meetings will feature “Gluten-Free Baking Classics” with Claudia Pillow, Ph.D. The meeting on the 21st is in Austin at 7 pm at Faith Lutheran Church 6600 Woodrow Ave. The meeting on the 22nd is in San Antonio at Whole Foods, Quarry Market, 225 E Basse Rd. Bio
Dr. Pillow coauthored The Gluten-Free Good Health Cookbook: The Delicious Way to Strengthen Your Immune System and Neutralize Inflammation with her sister, Annalise Roberts (author of Gluten-Free Baking Classics) In 2007, Claudia received her Ph.D. in Health Studies from Texas Women's University. As part of her dissertation, she developed and tested a celiac disease school screening tool and is currently in the process of making the program available nationally. Prior to earning her doctorate, Claudia was a 1982 graduate of the New York Restaurant School and worked as a chef and caterer for many years. A MBA and BS from Rutgers University offered her the opportunity to jump to the corporate side of the food industry, where she marketed cheese, natural beverages and currently, Hail Merry® gluten-free snacks. Dr. Pillow served on the board of the Gluten Intolerance Group of North America and is now a local resource for the North Texas chapter where she organized the Gluten-Free Makeover Event: A Healthier You, at the Gaylord Texan last year, attended by 700 people. She teaches gluten-free culinary classes, lectures nationally and writes for her website www.foodphilosopher.com and blog www.drclaudiapillow.wordpress.com.
