I'd think about going with the CAT 5 and the panel mount kit, but I am not 
sure what a CAT 5 cable is, and where I can get them.

Also, am I going to be spending just as much money if I go the front panel 
kit mount, plus the CAT 5 and double female adapter?

No, no one has a clue why Kenwood priced stuff that way.  You'll need the
kit with the mounting kit.  I think a lot of people have used a shielded
cat 5 network cable for the mike and a double female adapter.
