Dear Listmates - 
My adult daughter did some online research, and found a GF "cheese" that melts and is GF, soy-free, corn-free, nut-free, dairy-free, night-shade-free, etc. I have to avoid gluten, dairy, soy, and nightshades: 

It is called Daiya Vegan Cheese Shreds. It comes in Italian or Cheddar, and runs $40 for a 5-lb bag, plus shipping. It can be frozen, so I am going to order some and divide it into zip-lock bags and freeze it. It can also be purchased in 8-oz bags, but of course, it runs more per lb that way. $5.29 at one site, $5.49 at the other, per 8 oz bag.

One of them charges a little less than the other, but I don' t know what shipping costs each place. I will probably try a couple of 8 oz bags of each variety, before buying the big bag. A chest freezer comes in handy when you have Celiac Disease.
