Hi - I've been looking into retirement communities where some meals are provided, and after talking to the dietary supervisors, I find them especially poorly informed on what a gluten free diet is. Most of them feel it is just flour that must be avoided. Is there somewhere I can download some material to give to them to read?
I do not want to suggest a book as that would be too much and they probably wouldn't read it at all. Is there a source anyone knows or some really good pages of information such as what is ok and what is not and where to look for hidden gluten? I have much of this but it is in many places (including my head). What I would like is a single source, or at most 2 or 3 places. I would appreciate any information and what has happened if anyone has gone this route.
