He was trying to work a balance which would be easier for people to
stick to. There is no carbage that is necessary for humans. There are,
actually, only two types of carbohydrates. Bad and terrible. If you
eat only animal products, non-adulterated, there will be no craving for
carbage. And sweet drinks cause an insulin response, whether they
contain sugar or not. The hormonal culprit for the diseases of
civilization is insulin.
