Has anyone used Jerusalem artichoke flour?
I was recently talking to a non-GF foodie friend who suggested looking into
pasta made from Jerusalem artichoke flour. He thought it would be GF, but I
looked it up and it turned out the stuff he was talking about was mostly
wheat, as I expected - but it did make me wonder about the artichoke flour.
It turns out that Jerusalem artichoke has nothing to do with Jerusalem and
is not an artichoke, but a tuber (

Still, it looks interesting and GF - has anyone used Jerusalem artichoke
flour for anything? If so, what do you make, why do you use that flour, and
where do you get it? I will summarize.
