 Great thread!  Good reading, and a few LOL moments.  Thanks to you all.
By the way, I agree that we as architects should not specify aggressive
methods to remove these cementitious coatings without expecting
ridiculous cost and damage results.  Thankfully there are practical
trades people who will point this out.
