This was one reply I thought had good info to share about introducing gluten
to babies and children:

We had a speaker from the University of Chicago. She brought an interesting
slide with symtpoms at various ages. Between 1 & 2 years of age, the
symptoms of celiac are few and very specific so celiac is easiest to spot.
Older than that, a diagnosis becomes more difficult as classic symptoms
decline and non-traditional symptoms become more diverse.
If children are going to get celiac they will probably get it at come point
so it might just as well be when it can diagnosed easily & quickly.
Otherwise, parents will always be watching them for the signs & wondering if
they missed something. Also, since the child is living in a
'gluten-reduced/celiac' household, the symptoms may be less severe and
overlooked or dismissed. And a prompt diagnosis of celiac will decrease the
chance of developing other autoimmune disorders
