When we had our cabinets built 15 years ago, he used a catalyzed varnish finish over dark-stained (mission-style) oak. They do show a little cracking of the finish at a few joints, but still look great. Hardly noticeable. All they ever need a little damp cloth wipe-down from time to time. I would expect your joints to show cracks. Everything expands and contracts with temperature and humidity variations across the seasons.
