I just got these from a listmate, not the original one. If it comes through with computer mumbo jumbo, I honestly don't know how to clarify it. Sorry about that. Hope it works. All I did was copy and paste. I don't know what white/Colombian cheese is--in bottom recipe.
The listmate who sent me the original recipe wrote back that she'll send hers to the list. Thank you all.
Lin
Brazilian Pćo De Queijo
1/2 cup vegetable oil (0.5)
1/3 cup water (0.33)
1/3 cup milk (0.33)
1 tsp salt (optional)
2-1/2 cups tapioca starch (2.5)
2 eggs
170g (6 oz.) approx. grated hard cheese (Parmesan)
Boil vegetable oil, water, milk and salt until white foam appears
(on stove or in microwave):
Add this hot mixture tapioca starch.
Mix well with wooden spoon and let rest for about 15 minutes.
You will get a white ball.
Mix in eggs and grated hard cheese (e.g., parmesan).
You will get a gooey, sticky mass.
If it's too sticky add more tapioca.
To form balls, cover hands with grease, use a teaspoon
and quickly roll into ball shape as best you can
(they will smooth out during baking).
Better yet, use a miniature ice-cream scoop.
Each ball should be about 38 mm (1.5 inch) in diameter.
Bake on lightly greased sheet or on parchment paper.
Bake for 20-25 minutes at (325 to 350 deg. F) 160 to 175 deg C,
depending on size, until tops begin to brown.

Grind the cheese. Mix the cheese with the cornstarch, eggs, brown sugar and salt. Make little balls, the size of a golf ball, and put into medium-hot vegetable oil and fry slowly. After a few minutes increase temperature and fry until they are golden. When they are ready, place on absolvent paper, to drain the oil. Makes 15 buńuelos
