This is not an advertisement, as I have no affiliation with Bob's Red Mill,
other than consumer. I just tried their gluten-free "Homemade Wonderful
Bread" mix. I used buttermilk and added a little flax seed meal. It is the
best bread I've had so far. It's spongy, soft and delicious. I don't know
how long it's been out there, as I was making the same bread I always do,
but this is really good.
Good luck if you try it.
PS: I always heat my liquid to 110 degrees, before adding the yeast. Doing
this, I've never had a problem with rising.
