Thanks to those that replied with advice. We're now back from Costa Rica and can report that both my gluten/dairy intolerant daughter and vegetarian wife were well fed. Many typical Costa Rican dishes are based on Gallo Pinto, a beans and rice mix. I saw it with both red and black beans, but it was everywhere. We often found it served as a one-plate meal with a variety of veggies or meats as a Casado xxx; as in Casado Vegetariano, Casado Pollo, etc. Usually included fried plantains and often a fried egg. Some days fried eggs were pretty much on everything. Also lots of corn-based foods in addition to tortillas. Not a problem feeding anyone in the family.
Only surprise was prices. Costa Rica not the deal it used to be. Lunches/Dinners generally averaged $20-25+ per person. Breakfasts around $10-15. Not outrageous, but generally much higher than the last time I was there. OK, that was a few years back, but still, it was surprising.
A great trip, tho. Never felt unsafe driving or walking around, and the folks were friendly. I recommend it to anyone.
