I contacted Beach Creek, Boyd's BBQ (on the Boardwalk) and Garfield's.  Beach Creek told me to let the server know and he would have the chef speak with us when we arrived.  Boyd's told me the sauce is GF and the meats are served dry and you add the sauce. Garfield's told me to check the menu on line to see if anything would work.

We dined at Aleathea's(Cape May), which was delicious and expensive-$25+ entrees.  The waiter gave my daughter a menu with the GF choices highlighted.  
Our other 2 dinners were in Wildwood.  My college sophmore, GF daughter would not mention her needs in Schellenger's or Uries.  She selected grilled items and took her own salad dressing.  No adverse reactions, but she is not sensitive to slight cross contamination.  She is old enough that she makes her own choices about food.

Our hotel had a microwave and refrigerator so we took food for breakfast and lunch from home.
