My wife has this recipe posted in her Gluten Free Bakery in Madison. Copies
are flying off the counter. Thought I'd share it with anyone who is currently
not a mail order or walk-in customer, so naturally you would use your own GF
bread.
This recipe makes a traditional stuffing. In the absence of allergies to
certain food groups, you can give it a twist by a adding sauteed wild mushrooms,
dried fruits, apples, cranberries, lightly toasted nuts, fresh baked shucked
oysters, or cooked GF sausage.
4 cups Silly Yak Bakery's GF Bread of your choice, cubed & lightly toasted
6 tablespoons unsalted butter or margarine
1 cup quarter-inch diced onion
1 cup quarter-inch diced celery
1/3 cup quarter-inch diced carrot
16 large fresh sage leaves
1/8 teaspoon nutmeg
1 pinch dried thyme leaves
1/2 teaspoon coarse sea salt
24 grinds fresh black pepper
3/4 cup broth (veggie or chicken)
1. Put bread cubes into a mixing bowl. Melt 4 tablespoons of butter in small
skillet. Saute' the onion, celery & carrot until tender. Then lightly mix the
veggies in with the bread.
2. Use same skillet, melt remaining 2 tablespoons butter. Toss in sage leaves
& remaining herbs/spices; saute' until sage leaves are crisp. Add in the broth
3. Pour broth mixture over bread cubes in mixing bowl. Stuff the turkey &
bake. Or bake in a separate dish at 350 Deg. for 45 min or longer depending on
your oven.
